Fajeto | Aam Kadhi - Gujurat Special

Fajeto is a classic Gujarati cuisine made out ripe mango juice , curds and gram flour with the right amount of spices and tempering.
Ras Puri is very famous among the Gujaratis during the Mango Season and most of the households make this Fajeto to complete the meal of Ras puri.  With very mild spices and no oily base , this kadhi is very light on the stomach and easily digestible.

Ingredients
2 cups thick curd
1 tablespoon besan / gram flour
1 sweet ripe mango (any variety without sourness)
2 green chillies
Small piece of ginger
1 tsp red chilli powder
1/2 tsp haldi powder
Few curry leaves
Coriander for garnish
2 tsp oil
1/2 tsp mustard seeds
1/2 tsp jeera
1-2 cloves
Salt as needed
1 tsp jaggery

Method

  • Wash the mango and scoop out the pulp without the skin and make a puree along with the green chillies and ginger in a blender. 
  • (If using ready made aamras, use a teaspoon of green chilli ginger paste ) 
  • Whisk the curd and besan well with a whisker to make it creamy and lump free.
  • Add the mango puree, salt , jaggery , red chilli powder, haldi and whisk once again.
  • Add 1/4 cup water , mix it and cook on medium flame until the mixture boils well and the raw flavor of mango and besan is lost .
  • Keep stirring regularly so that the gram flour doesn't stick to the bottom of the pan. 
  • Turn off the flame and keep aside. 
  • Prepare a tempering of mustard seeds , jeera and cloves in hot oil . Once they crackle , turn off and add curry leaves ,1/2 tsp red chilli powder and asafoetida to the hot oil and pour it over the Fajeto. 
  • Mix well and let the flavors get infused into the Fajeto.
  • Serve hot with rice, puris, rotis or even biryani .
