Hurigadle Podi | Pottukadalai Podi | Fried gram spice powder

Spice powders or Indian masalas always add an extra zing and flavor to the recipes being dished out. South Indians have a variety of spice powders or masalas which are used as side dish to go with  idlis, dosas, chapthies etc . They are also known as chutney podis or idli milagapodis .


Hurigadle chutney podi is a delicacy from karnataka where this masala is prepared using fried gram / puttani . A very tasty side dish to go with idlis / dosas and can be whipped up in just about 5 mins.



This can be made very quickly without much effort and preparations. The main ingredient here is Fried gram dhall also known as Hurigadale / Puttani (Kannada) , Pottukadalai (tamil) , Chutney dhall (hindi) .

hurigadale pudi , hurigadle chutney podi, puttani podi, curry powder, pottukadalai pudi, pottukadale podi, hurgadle , hurigadale , putani, puttani, chutney podi, chutney pudi, fried gram podi, hurgadle pudi,

Ingredients
 1 cup fried gram / pottukadalai/puttani/ chutney dhall ( 150 gms approx)
5-6 dry red chillies  ( you can take mix of byadgi as well as spicy variety)
handful of fresh curry leaves
pinch of asafoetida / hing / perungayam
salt to taste
1 tsp oil

Method
In a frying pan , heat the oil and fry the curry leaves until crisp.


Add hing and then roast the dry chillies until crisp and turn it off.


add the fried gram to the warm pan and lightly roast it . The pan's heat is enough to roast the fried gram .


Let all the ingredients cool for a few mins and then grind it into a fine powder by adding salt as needed.


Store it a dry container and use a dry spoon.

Notes :
  • You can also dry roast some khobri / khopra/ dry coconut shavings until crisp and add to this powder while grinding . In that case this podi has to be refrigerated so that it does not go bad .
  • You can use this podi to sprinkle over stir fries like potato roast , raw banana roast etc.It gives a nice crispy texture and taste to the curry.
  • Mix it with hot rice and ghee and eat it along with your meal.
  • This podi can be used as a side dish for idli/ dosas by mixing it with gingelly oil .
  • Can also be used to thicken the gravies like sambar or kootu incase it has become watery.
