Achaari Ajwain Paratha | Pickle flavored Flat Bread

Parathas are a very healthy and a sought after breakfast in most Indian households. Pickle and curd are the best accompaniments for any kind of paratha ; stuffed or flavored . Today's paratha is flavored with pickle spices while kneading the dough which gives it a nice spicy as well as tangy flavor . Curd or some potato stir fry can be used as an accompaniment to complete a meal or brunch or a heavy breakfast.
These parathas can be packed for long travels or picnics as they stay fresh for 2-3 days if prepared and stored properly.

Ingredients
1.5 cups whole wheat flour
1/2 tsp red chilli powder
1 tsp haldi powder
1 tsp ajwain seeds / omam
1-2 tablespoon pickle masala - I used mango pickle
( just the flavored oil & spices from any pickle you like without the pieces)
salt to taste
Oil for roasting the parathas.

Method

  • In a mixing bowl,combine the pickle oil,salt,chilli powder,haldi, whole wheat flour  and by adding water knead a soft and pliable dough . Let it rest for 15-20 mins.

  • Pinch out even sized balls and roll them into thin rotis .
  • Heat a griddle,place the rolled out paratha on to the griddle,flip to other side when you see light brown spots.
  • Drizzle some oil and cook it well on both sides.
  • Serve hot with Green chutney or thick curd . Any mildly spiced gravy will also go well with this paratha.
