Cholam Thattai | Jowar Thattai | Sorghum Crispies

Diwali is just round the corner and we shall soon start preparing yummy snacks for family,friends and relatives .
Thattai is a south indian version of Mattri made using Rice flour and udad dhall flour generally . This is a slightly different and a healthier version using Millet flour.

Try this different and crispy Thattai using Jowar Flour / Cholam Maav and surprise your family :-)


Ingredients
4 ladles jowar flour
1 ladle rice flour
1/2 ladle udad dhall flour
1/2 tsp haldi
1 tsp red chilli powder
few curry leaves
2 tablespoon unsalted butter ( room temperature)
method
  • Take all the dry ingredients except butter and mix it well with fingers or a spoon,
  • add the butter and form a crumbly mixture. adjust butter if need be.
  • add water and knead a soft pliable dough.
  • spread a neat plastic sheet and grease it well.
  • make small balls out of the dough ,place them on the sheet and using a bottle cap,press it lightly to form even discs.
  • prick tiny holes using a fork / tooth pick to prevent puffing while frying.
  • slip the discs carefully in hot oil one by one.
  • fry on MEDIUM flame until crisp and golden brown.
  • Drain carefully and store in air tight container away from moisture.

  5. Cholam Thattai is definitely so different from the normal mathri that we make. More healthier as you've used jowar and it looks so crispy too. Perfect for any festival.
