Aloo Methi Mattar Sabji (No Onion No Garlic Version)

A classic side dish to go as an accompaniment with rotis/naan/puris or even comforting piping hot dal chawal.
The wonderful taste and aroma of sauteed methi leaves with cumin seeds takes the entire dish to a whole new level.
People who dislike methi for its bitterness will start eating methi if you prepare this recipe.
As this does not have any kind of over powering masalas ,even the elderly people who refrain from masala based gravies due to age and digestion issues can enjoy this simple and humble sabji.

Again,this is a No Onion No Garlic recipe,so you can even make it for lunch/dinner get togethers during any kind of Pooja or Satsangs.

Ingredients
3-4 medium sized potatoes
1 cup packed finely chopped methi leaves
1 medium tomato chopped
1/2 cup peas ( frozen / fresh)
1 tsp jeera
1 tsp finely chopped ginger
1 tsp red chilli powder
2 tsp dhaniiya powder
1/2 tsp haldi  powder
1 tsp oil
salt to taste
pinch of asafoetida

Method

  • Peel the potatoes and cut them into medium sized cubes and boil them with salt and water. Drain and keep aside.
  • In a kadai,heat the oil,splutter the jeera,ginger and the asafoetida.
  • Add the haldi ,red chilli and dhaniya powder in the oil and quickly mix it . This helps in getting the rich red color.
  • Now ,add  the tomatoes and peas and saute it with some salt.
  • Sprinkle some water and let it cook for a few minutes.check if the peas have become soft.
  • Add the methi leaves and saute it till you get a nice aroma.
  • Finally add the boiled potatoes,mix it well ,add about 1/4 cup water ,adjust the salt and close the lid and cook for a few minutes. This step ensures that all the flavor is absorbed into the potatoes.
  • Turn off and garnish with fresh corriander and a teaspoon of lime juice.
  • Serve hot with your choice of roti/naan/puri or even rice and dal.
